This recipe was inspired by a trip I took to Amsterdam last summer.
I was strolling through the very scenic Vondel Park taking in all of the natural wonder. All of the walking made me a bit hungry. I wasn't hungry enough for a full meal, but I wanted more than a snack. I stumbled upon a stand that was selling fries and that seemed to be the best option for the moment.
The woman serving me was very kind as she filled a paper cone with thick cut, rustic looking fries. She began to reach for a bottle of mayonnaise and she doused my fries in it. I was a bit shocked as I expected ketchup to be given to me (on the side). I am very American after all and ketchup goes with fries the way peanut butter goes with jelly. It was not my preference but I said to myself "When in Rome!". I ate the fries & honestly the mayonnaise was an interesting accoutrement but after a few bites it was difficult to eat. Mayonnaise is really fatty and so are French fries.
I desperately wanted to recreate this meal using ingredients that I have in South Korea. I also wanted to take the flavor of mayonnaise up a notch because it is a very dense condiment. The Korean sweet potatoes add a hint of sweetness and texture to the fries and the wasabi mayonnaise definitely sends the tastebuds into a frenzy. This truly is a Pop Of Taste! Enjoy ❤- Markita XO
