Salmon Stuffed With Spinach & Mushrooms
Salmon is a rich, full flavored fish that can be cooked using various techniques and ingredients. It has a firm texture with large flakes and it can easily stand alongside bold side dishes and sauces. Not only does baking the salmon intensify the flavor, it is the simplest way to cook the fish. After all who says cooking a amazing meal has to be tedious. The spinach cuts the richness of the salmon and the cream cheese adds a wonderfully light and acidic taste to the dense fish. The capers provide a salty, tangy and lemony flavor and the mushrooms provide an earthy and umami taste that ties all of the different flavors together. Ingredients
450 gram Salmon Fillet (skin removed)
100 grams Mushrooms
200 grams Spinach
2 tablespoons Cream Cheese (room temperature)
1 tablespoon Capers (drained from liquid)
1 tablespoon Olive Oil
1/4 teaspoon Salt
1/4 teaspoon Crushed Red Pepper Flakes
1/4 teaspoon Garlic Powder
1/4 teaspoon Italian Seasoning

Directions
Preheat oven to 350 degrees F/ 175 degrees C
Stuffing
Take the mushrooms and cut them into a small dice and set them aside (1/4 inch cubes).
Mince the capers and set aside.
Heat olive oil in a pan over medium heat.
Add the diced mushrooms to the pan and cook until the mushrooms have reduced in size.
Add the spinach to the pan and saute until the spinach has wilted.
Remove the mixture from the heat and allow to cool.
Once cooled mix the spinach and mushroom mixture with cream cheese and capers.
How to Butterfly Salmon
Place the fillet on a clean work surface. Hold a long sharp knife along the long side of the salmon.
Using a sawing motion, slice through the fillet almost to the end, being careful not to cut all the way through.
Assembly
Place butterflied salmon fillet cut side up on a baking sheet lined with foil or parchment paper. If you are using foil make sure you lightly grease the foil before placing the salmon.
On 1 side of the fillet, begin adding the filling to the center.
Fold the fillet closed with the other side and secure with toothpicks.
Mix the seasonings together in a small bowl and sprinkle them on top of the salmon.
Bake uncovered in the oven for 15-20 minutes.
Take the salmon out of the oven and remove the toothpicks. Cover the salmon with foil and let the it rest for 10 minutes before serving.
